Thalassery Chicken Dum Biriyani/Malabar Chicken Biriyani

INGREDIENTS

  • 1. Chicken 1 1/2 kgs
  • 2. Kaima Rice/ Jeerakasala Rice 800 gms
  • 3. Onion 5 nos
  • 4. Onion,small 4 nos
  • 5. Tomato,big 1 nos
  • 6. Green Chili 16 nos
  • 7. Ginger,medium 1 piece
  • 8. Garlic Cloves 10 nos
  • 9. Salt 2 pinch
  • 10. Biriryani Masala 1 tsp
  • 11. Turmeric Powder 1/4 tsp
  • 12. Lemon Juice 1 tsp
  • 13. Mint leaves 1 sprig
  • 14. Coriander Leaves 1 sprig
  • 15. Cashew nuts 10 nos
  • 16. Raisins 15 nos
  • 17. Ghee for frying 1 litre
  • 18. Turmeric 1/4 tsp
  • 19. Milk 1/4 cups
  • 20. Water 2 cups
  • 21. Cinnamon 1 nos
  • 22. Cloves 4 nos
  • 23. Cardamom 4 nos
  • 24. Biriyani Masala: Fennel Seeds 2 tbsp
  • 25. Sha Jeera 1/4 tsp
  • 26. Cardamom 12 nos
  • 27. Cloves 1 tsp
  • 28. Cinnamon 23 piece
  • 29. Mace 1/4 piece
  • 30. Pepper 10 nos
  • 31. For Marination: Turmeric powder 1/4 tsp
  • 32. Chilli powder 1/2 tsp
  • 33. Salt 1 tsp
  • 34. Lemon Juice 1 tsp

PREPARATION

1. Marinate Chicken with turmeric powder,salt,lemon juice and chilli powder for minimum 20 minutes

2. Roast and powder biriyani masala, keep aside

3. Finely slice onion and Deep fry them and keep them in the strainer

4. Wash and soak rice for 20 minutes and then drian and keep aside

5. Heat oil in a kadai

6. Add sliced onion along with salt and saute till transparent

7. Then add crushed ginger-garlic-chilli and saute till light brown colour

8. Then add mint-coriander leaves and turmeric

9. Saute for few seconds,Now add tomato pieces stir and close ,cook well

10. When done open the cooker and marinated chicken pieces,mix well

11. Close and cook for till done in medium flame

12. When chicken is 3/4th done add fried onion and again cook

13. Then add 1tsp of biriyani masala to the chicken and mix

14. Then add lemon juice

15. Check the salt and adjust if needed,Then keep aside

16. Boil water and add spices along with salt

17. Then add ghee and mix

18. When started boiling ,add rice and allow to boil

19. Then close the kadai and lower the flame,stir in between

20. When the water has completely absorbed off the stove keep the rice undisturbed for 20 minutes

21. After 20 minutes the rice will be perfect

22. Now we need to dum the biriyani

23. In a big nonstick kadai add some ghee then add the chicken masala in the bottom

24. On top of that sprinkle cashew-kissmiss,leaves ,fried onion and biriyani masala

25. Then layer the rice

26. In each layer sprinkle everything shown in the video

27. Finally close the kadai with a foilpaper

28. then close with the lid Then heat a tawa and place this kadai on the tawa and dum

29. So after 30 -35 minutes tasty yummy Thalasseri Dum chicken biriyani is ready to serve
