Prawn Pulao

INGREDIENTS

  • 1. rice 1 cups
  • 2. prawns (any variety) 200 gms
  • 3. medium onion sliced thinly 1 nos
  • 4. ginger garlic paste or 2 garlic cloves minced 1 tsp
  • 5. green chili slit (skip for kids) 1-2 nos
  • 6. Garam masala or biryani masala (adjust to suit your taste) 1/2 - 3/4 tsp
  • 7. coriander powder 1/2- 3/4 tsp
  • 8. turmeric 1 pinch
  • 9. Salt as needed 1 tbsp
  • 10. coconut milk or 2 tbsp water (coconut milk adds taste and aroma) 2-3 tbsp
  • 11. Lemon juice as desired 1 cups
  • 12. Oil as needed 100 ml
  • 13. Dry spices or pulao spices 1 nos
  • 14. green cardamoms 3 nos
  • 15. cloves 4-5 nos
  • 16. cinnamon stick 2 nos
  • 17. star anise / star flower 1 nos
  • 18. strand of mace 1 nos

PREPARATION

1. Preparation-Wash and soak rice for about 30 mins

2. Cook it in whatever way you like either in the pot, pressure cooker or electric cooker

3. Cook rice till al dente

4. You can also add few drops of oil to the rice pot to keep the rice grainy

5. Rice should begrainy fully cooked but not mushy

6. Devein and clean prawns

7. Rinse them well

8. You can also wash them in vinegar to remove the fishy smell

9. Drain them completely and set aside

10. While the rice soaks and cooks, you can marinate prawns with ginger garlic paste, garam masala, corianderpowder, red chili powder, salt and turmeric

11. Making of prawn pulao--Heat a pan with oil and saute all the pulao spices until fragrant

12. Add onions and saute until golden and cooked well

13. Add the prawns and saute for 2 to 3 mins or until the raw smell from the ginger garlic goes away

14. Add mint and saute for 2 mins

15. Cover and cook on a low heat until the prawns are completely cooked

16. Add the coconut milk or water and allow to thicken

17. You must be left with a thick curry like prawn mixture

18. At this stage if the prawn are swirled it means they are cooked completely

19. If not sprinkle little water and cook further

20. Overcooking makes them hard

21. Add cooked and cooled rice along with lemon juice

22. Mix well and serve prawn pulao hot with fresh onion
