Pavakka Paal Curry-Kaipakka Curry- Bitter gourd curry with out much bitterness

INGREDIENTS

  • 1. Bittergourd,medium 1 nos
  • 2. Big onion 1 nos
  • 3. Shallots 5 nos
  • 4. Green chilli 3 nos
  • 5. Ginger- 1 tsp
  • 6. Curryleaves 5-6 nos
  • 7. Hot Water 1 cups
  • 8. Tamarind water 1 tsp
  • 9. Tomato 1 nos
  • 10. Chilli powder 1/2 tsp
  • 11. Turmeric powder 1/4 tsp
  • 12. Coriander powder 1 tsp
  • 13. Coconut pieces 5-6 piece
  • 14. Coconut oil 1/2 cups
  • 15. Thick Coconut Milk 1 cups
  • 16. Mustard seeds 1/4 tsp
  • 17. Fenugreek seeds 1 pinch
  • 18. Dry red chilli 2 nos
  • 19. Jaggery 2 tbsp
  • 20. Salt 1 tsp
  • 21. Tamarind water 1/2 cups

PREPARATION

1. Cut and remove seeds and white parts from the bitter gourd

2. Cut into small pieces and soak in tamarind salt water for 15 minutes

3. Then strain and keep aside

4. Heat oil in kadai and roast coconut pieces

5. Then to the same oil and bitter gourd and roast for 10 minutes

6. Now heat coconut oil ,splutter mustard seeds, fenugreek seeds d red chilli

7. Then add curry leaves and green chilli

8. saute for a minute

9. Now add onion and shallots along with ginger

10. Saute till transparent

11. Then add add powders and saute till raw smell goes

12. Now add tomato and cook well

13. To that add tamarind water and mix

14. Now add fried bitter gourd d coconut piece ,mix well

15. cook for 2 minutes

16. Then add hot water and close the kadai and cook for 5 minutes

17. Open the kadai and add jaggery and thick coconut milk

18. No need of boiling the curry

19. Finally sprinkle coconut oil and curry leaves

20. Close the kadai for 10 minutes and use

21. It tastes great for the next day
