Hotel Saravana Bhavan Style Veg Kurma/Zero Oil Healthy Vegetable Kuruma

INGREDIENTS

  • 1. Carrot 1 nos
  • 2. Potato 2 nos
  • 3. Beans 12-15 nos
  • 4. Big Onion 1/2 bowls
  • 5. Curry leaves 1 sprig
  • 6. Water 2 cups
  • 7. Salt-to taste 1 pinch
  • 8. Coriander leaves 5-6 nos
  • 9. Curd 2 tbsp
  • 10. Cashewnuts 6 nos
  • 11. For the masala paste:Big onion 1/4 bowls
  • 12. Ginger,small 1 piece
  • 13. Garlic Clove 1 nos
  • 14. Green chilli 1-2 nos
  • 15. Curry leaves 5-6 nos
  • 16. Cloves 1 nos
  • 17. Cinnamon,small 1 nos
  • 18. Cardamom 1 nos
  • 19. Fennel Seeds 1/4 tsp
  • 20. Grated Coconut 4 tbsp
  • 21. Turmeric powder 1/2 tsp
  • 22. Coriander powder 1/4 tsp

PREPARATION

1. Wash and peel vegetables

2. Cut into small pieces (potato,carrot,beans,tomato) (if u want u can include cauliflower ,green peas etc)

3. In a cooker add all these vegetable along with 1/2 of a big onion (sliced ) and water

4. Cook until done,(one whistle is enough)

5. Let it cool down and open the cooker and set aside

6. Add all ingredients listed in masala paste into a blender and make a very fine paste

7. Add this paste to the cooked vegetable along with salt and allow to boil

8. Stir well until the boiling point

9. Allow to thicken the gravy to a semi medium consistency

10. Garnish with coriander leaves
