INGREDIENTS

  • 1. Brinjal,small 4 nos
  • 2. Olive oil 4 tbsp
  • 3. Onions,medium size finely chopped 3 nos
  • 4. Tomato,medium size finely chopped 4 nos
  • 5. Salt 1 1/2 tsp
  • 6. Curry Leaves 1 sprig
  • 7. Powdered coriander seeds 3 tsp
  • 8. Powdered fennel seeds 2 tsp
  • 9. Red chilli( degi mirch) 1 tsp
  • 10. Pav bhaji masala 1 tsp
  • 11. Garam masala powder 1/2 tsp
  • 12. Turmeric Powder 1/2 tsp
  • 13. Cumin Seeds 1/4 tsp
  • 14. Mustard Seeds 1/4 tsp
  • 15. Coriander leaves,Handful,finely chopped 1 nos
  • 16. For stuffing- Peanut 4 tbsp
  • 17. Coconut 2 tbsp
  • 18. Fennel seeds 1 tbsp
  • 19. Coriander Seeds 2 tbsp
  • 20. Salt 1 tsp
  • 21. Chat Masala 1/2 tsp

PREPARATION

1. Roast and powder all the ingredients of stuffing and keep aside

2. Wash and cut brinjals with one end of the brinjal and stalk leaving intact

3. Wash and immersed brinjals in salted water till use

4. Stuff all the brinjals with stuffing masala

5. Take a wok .put one tablespoon olive oil and roast brinjals

6. Keep roasted brinjals aside

7. Now in a wok put remaining olive oil and splitter mustard and cumin seeds and add curry leaves

8. Now add chopped onions and saute till little brown .then add tomatoes and saute for 4-5 minutes

9. Add all the spices of curry and saute for one minute

10. Add watee till your desired consistency of gravy

11. Add brinjals and cook till tender on low flame

12. Switch off the flame and add coriander leaves.curry is ready
