Grilled Chicken Brunch

INGREDIENTS

  • 1. 1 large sweet potato
  • 2. 3-4 Chicken boneless breast fillets
  • 3. 1 teaspoon turmeric powder
  • 4. 1 teaspoon red chilli powder/ pakrika
  • 5. 1 teaspoon all spice /garam masala powder
  • 6. 1.5 teaspoon salt
  • 7. 1 tablespoon crushed black pepper
  • 8. 1 tablespoon olive oil
  • 9. 1.5 teaspoon ginger-garlic paste
  • 10. Juice of 1 lemon
  • 11. 1/2 a ripe avocado
  • 12. 100 gm of salad leaves of your choice

PREPARATION

1. Boil/pressure cook the sweet potato.Deskin,mash well and keep aside to cool a bit

2. Make fork marks/slight cuts with a sharp knife on the chicken fillets

3. keep the dry spices ready to be used on a plate or a flat surface

4. Add oil and ginger garlic paste to the dry spices and blend well

5. Gently coat both sides of the chicken fillets with the spice mix and keep covered for at least 5-7 minutes

6. Meanwhile start the oven to grill mode to prepare

7. After marination, place the chicken fillets on the grill rack and grill for around 4-5 minutes on each side

8. to keep the chicken warm, keep them in the oven till serving

9. before plating, take the chicken off the grill add a dash of fresh lemon juice over the fillets

10. Add a pinch of salt to the mashed sweet potato and mix well

11. slice fresh avocado lengthwise

12. To serve, place a generous scoop of mashed sweet potato in the center and arrange the chicken fillets around serve accompanied with avocado, lemon and salad of your choice
