Fettuccine With Chicken makhani Gravy

INGREDIENTS

  • 1. For chicken marination:
  • 2. 250 grams boneless chicken ,cut into cubes
  • 3. 50 grams hung curd
  • 4. 1 tsp kashmiri red chilli powder
  • 5. 1/2 tsp turmeric powder
  • 6. 1 tsp gramflour
  • 7. 1 tsp mustard oil
  • 8. 1 tsp salt or as per taste
  • 9. For tomato-onion gravy :
  • 10. 2 medium sized onion , sliced
  • 11. 4 large tomatoes ,cut into cubes
  • 12. 8-9 garlic cloves
  • 13. 2" ginger , sliced
  • 14. 10 -11 cashew nuts
  • 15. 2 dried whole red chilli
  • 16. 1/2 tsp cumin seeds
  • 17. 2 bay leaves
  • 18. 3-4 cloves
  • 19. 1" cinnamon sticks
  • 20. 3-4 green cardamom
  • 21. 6-7 black peppercorns
  • 22. 2 tbsp butter
  • 23. 1 tbsp Kashmiri red chilli powder
  • 24. 1 tsp garam masala powder
  • 25. salt as per taste
  • 26. 1/2 tsp turmeric powder
  • 27. 1/2 cup water
  • 28. For boiling pasta:
  • 29. 250 grams Fettuccine
  • 30. 1 tbsp salt
  • 31. 1 tbsp oil
  • 32. Sufficient water for boiling
  • 33. Other Ingredients:
  • 34. 1 tbsp butter
  • 35. 1 tbsp oil
  • 36. 2-3 cloves of garlic chopped
  • 37. Salt to taste
  • 38. 1/4 tsp sugar
  • 39. 1/2 cup chicken stock
  • 40. 1-2 tsp cream
  • 41. 1 tsp dried Fenugreek leaves
  • 42. 2 tbsp chopped cilantro

PREPARATION

1. Firstly take the pieces of chicken in a shallow dish and put curd, Kashmiri red chilli powder, turmeric powder,gramflour, salt and mustard oil for marination.

2. Mix properly and marinate for 20 mins.

3. For tomato-onion gravy: In a pan heat up butter and add cumin seeds,bay leaves,whole red chilli, cinnamon stick, cloves, green cardamom and black peppercorns, roast for few seconds and add onions and saute till translucent,add garlic, ginger, cashew nuts,tomatoes and saute for 5-6 minutes

4. Add Kashmiri red chilli powder, garam masala powder, salt and saute it

5. Add turmeric powder and again saute it till the tomatoes become soft.

6. Add 1/2 cup water, close the lid and allow it to boil for 8-9 minutes.

7. Let the tomato-onion gravy cool down and then blend it to a smooth paste.

8. Strain it to make a smooth sauce.

9. For boiling the pasta, take enough water in a big vessel and bring to a boil,add salt and fettuccine (paste), cooked most of the pasta.

10. Drain water, apply oil and keep aside.

11. In a pan heat little oil,add marinated chicken and fry for a while in high flame.

12. Add tomato-onion gravy, followed with a cup of chicken stock.

13. Add salt and allow it to boil for a while or till it done.

14. In a pan heat oil and butter,add chopped garlic and saute it for few seconds.

15. Add chicken with tomato-onion gravy ,add sugar, salt (if needed),dried Fenugreek leaves and boil pasta.

16. Mix well and Cook it for 5-6 minutes and add freshly chopped cilantro and cream, switch off the flame, give it a toss . Fettuccine is ready to serve .

17. Serve hot.
