Easy & Tasty Carrot Mezhukkupuratti/Carrot Stir Fry

INGREDIENTS

  • 1. Carrot 5 nos
  • 2. Green chilli 3 nos
  • 3. Small Onion 10-15 nos
  • 4. Chilli flakes 2 tsp
  • 5. Salt 1 pinch
  • 6. Water 1/2 cups
  • 7. Coconut oil 2 tbsp
  • 8. Curry leaves 2 sprig

PREPARATION

1. Peel and wash carrots

2. Then cut into medium pieces

3. To a oven proof bowl add these carrots along with salt green chilli and water

4. Close and cook for 10minutes in microwave

5. Heat a kadai and add coconut oil

6. To this add sliced onion and curry leaves

7. Saute till light brown colour

8. Then add chilli flakes or chilli powder and suate till the raw smell goes

9. Now add cooked carrot and mix well

10. Cook till u get a nice consistency

11. Check the salt

12. So the easy carrot mezhukkupuratti is ready to serve
