DRIED PRAWNS FRY (Unakka chemmeen varuthathu):

INGREDIENTS

  • 1. Dried Prawns 1 Cups(Cleaned and Washed)
  • 2. Shallots/Pearl Onions 1/2 Cups(sliced thin)
  • 3. Red/Kashmiri Chilly Powder 1-1.5 Teaspoons
  • 4. Crushed Chilly Flakes 1 Pinch
  • 5. Fresh Curry Leaves 1 sprigs
  • 6. Oil 200 Milliliters(To Fry)
  • 7. Salt some To Taste

PREPARATION

1. A. Take cleaned and well dried prawns. Heat a pan, when warm drip a few drops of oil, add the prawns into the pan and stir occasionally. Sprinkle some fine salt.

2. B.In reduced heat, fry the prawns till it is firm and dry. Take one prawn in your hand and if it breaks, this is the right time to remove it from the flame. Remove it from heat and keep it aside.

3. C. Heat oil in the pan and fry the sliced onions and the fresh curry leaves. Roast till the shallots are nicely saut?ed and curry leaves are well fried & crispy. Now lower the heat and add the chilly powder and flakes.

4. D.Take care not to burn this, remove from fire for a few seconds if needed. Return to heat, when the raw smell is gone, add the prawns. Mix well and fry till everything blends well.

5. Just wait for the aroma to kick in. Enjoy folks ?
